I just wanted to share this really great recipe with ALL of you. I made it last night so I thought I would share. Debby actually found it in Healthy Living and she was the first to try it and now the whole family loves it. Here it is...
What you'll need...
3 cups -cherry or grape tomatoes, halved
1/4 cup -balsamic vinegar
2 tbsp - olive oil
2 -cloves of garlic minced
1 tsp - salt and pepper
1 bag -baby spinach leaves
1 pkg - thin spaghetti noodles
1/2 cup-shredded asiago cheese (approx)
1/4 cup - chopped fresh basil or parsley - you choose...
1. Preheat oven to 400. Toss the tomatoes with the balsamic vinegar, olive oil, garlic, salt and pepper. Then, Spread the tomatoes on a foil-lined baking sheet.
2. Roast the tomatoes for 20 to 30 minutes or until shriveled and lightly browned. Scrape the tomatoes and juices into a large bowl when done in oven. Add in the spinach.
3. Meanwhile, prepare the pasta according to package directions.
4. Toss the pasta with the spinach, roasted tomatoes, asiago and basil.
I also add in chicken to ours. I usually just boil my chicken breasts and shread them and then sprinkle that on top too. Debby has also used shrimp too to add to it. Trust me it is soooo good and healthy for you too. And we also sprinkle with parmesan cheese.... (You don't have to use the asiago if you don't want.)

this sounds yummy! i love anything with excess amounts of asiago! i will have to try this this week.
